Werthers Ice Cream

Ingredients

4 oz (100g) light brown sugar.
2 oz (50g) golden syrup.
2 oz (50g) butter.
1/2 pt (300ml) double cream or 50/50 double and single mix.
2 oz (50g) Werthers Originals.

Method

Heat the sugar, syrup and butter, until the butter has all melted and the sugar has dissolved. Raise the heat, and boil for 2 minutes.
Remove from the heat and stir in 2 tablespoons (30ml) hot water. Whisk the cream until it forms soft peaks. Stir in the butterscotch sauce.
Pour into a container, cover and freeze until firm.
While freezing, grind up some werthers originals into a fine powder.
After about one and a half hours in the freezer remove and add werthers originals, folding them into the icecream.
Decorate and serve.
